Here at Step Brewers we have a massive appreciation for those brewers in Australia paving the way in mixed culture, wild and dare we use the term, sour beers.
We wanted to dedicate a series of episodes to those brewers and also partner with the best in the game. We are extremely pleased to announce the new series, as presented by Carwyn Cellars, Time in Barrel!Time in Barrel will be a deeper dive into our favourite breweries from around Australia who are producing these styles, what inspires them and where they see mixed culture and spontaneous beer going in Australia.To round out the series we will be hosting a round table episode with Carwyn Cellars, diving into their thoughts on the Australian scene, the exciting bottles we see coming from overseas and maybe even reach into our respective cellars for the evening!

To kick off our new series Time in Barrel presented by Carwyn Cellars, we caught up with one of our favourite breweries in the country, Dollar Bill. Dollar Bill won our hearts in 2019 and won the Steppie Award for Best New Brewery. Ed and Fiona join us to talk mixed culture, their inspirations and what they are looking forward to releasing over the next few years. They also settle the age old debate that haunts us all…Biggie or Tupac?
