It's a pleasure to welcome Dr. Chris Knobbe back to the show. He is a physician, ophthalmologist, nutrition researcher, author, speaker, public health advocate, and the founder of two nonprofit organizations: Ancestral Health Foundation and Cure AMD Foundation. Since 2015, Dr. Knobbe has given scores of presentations and achieved international academic recognition for his work on the dangers of highly polyunsaturated vegetable oils. Dr. Knobbe’s goals are altruistic and humanitarian; he accepts no compensation for his work in this field.

In this episode, Dr. Knobbe argues that seed oils are hazardous, contributing significantly to obesity and chronic diseases. He explains that the high Omega-6 fatty acid content in these oils accumulates in our body fat and cell membranes, creating a pro-oxidative and pro-inflammatory environment. This oxidative stress, rather than inflammation, is the primary issue, leading to cellular damage, particularly in mitochondria, which disrupts energy production.

Tune in as Dr. Knobbe argues that diabetes prevalence isn't primarily linked to sugar consumption, contrary to common belief. He highlights historical data showing minimal correlation between sugar intake and diabetes rates, noting that while sugar intake increased modestly, diabetes rates skyrocketed. Instead, he points to the dramatic rise in vegetable oil consumption, describing these oils as chronic metabolic poisons that cause insulin resistance by damaging mitochondria through oxidative stress.
