I feel this changes with age/ body type/ intensity. what methods including diet, do you guys use to ensure your stress cup can handle a solid class/roll the next day, the following day?

Dealing with weight loss with Jiu Jitsu
since starting I've lost weight knowing that it is very individualized, to appropriately/ healthily regain my weight, is it as simple as increasing my calorie intake? or should I shoot for a ratio of carbs/fats/protein?
My son and I have been training for about 8 months. Are there any special considerations, with regard to nutrition/ supplementation and exercise, to help my son (7 years old) and I, get the most out of our training? Things we can both do? Things he should be doing differently than me?
Have you ever needed a mat enforcer, How do you deal with over aggressiveness in class?
